How to Make Guilt Free Mac-N-Cheese [VIDEO]
If you know me, you know I’m a foodie. Of my favorite foods, Mac-n-cheese takes home the golden crown of goodness; It’s my guilty pleasure, and the guilt needs to stop.
Thanks to one of our listeners, Cyndi Mclaughlin-Ramsey from EHT who sent us this recipe via snapchat, now there’s a way to accommodate my Mac-n-cheese addiction in a healthy way!
Believe it or not, this Mac-n-cheese is made with ZERO cheese…All fresh ingredients, gluten free, and made with healthy alternatives to make it JUST FOOD.
Here’s what you’ll need:
- 1 cup cubed potatoes
- 1/2 cup cubed carrots
- 1/4 cup of vegetable oil
- 1/4 cup of unsweetened vanilla almond milk
- 2 teaspoons of fresh lemon juice
- 1 1/2 teaspoon of arrowroot or tapioca flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon nutritional yeast
- 1/2 teaspoon sea salt
- brown rice pasta shells
- salt, pepper, pickled jalapeno slices to taste
