Thanks to one of our listeners, Cyndi Mclaughlin-Ramsey from EHT who sent us this recipe via snapchat, now there's a way to accommodate my Mac-n-cheese addiction in a healthy way!

Believe it or not, this Mac-n-cheese is made with ZERO cheese...All fresh ingredients, gluten free, and made with healthy alternatives to make it JUST FOOD.

Here's what you'll need:

  • 1 cup cubed potatoes
  • 1/2 cup cubed carrots
  • 1/4 cup of vegetable oil
  • 1/4 cup of unsweetened vanilla almond milk
  • 2 teaspoons of fresh lemon juice
  • 1 1/2 teaspoon of arrowroot or tapioca flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon sea salt
  • brown rice pasta shells
  • salt, pepper, pickled jalapeno slices to taste
